Food, Fast: Chicken with haloumi and honey

Let’s talk about chicken. I’m a fan. It’s versatile, cooks quickly, and is relatively healthy (so I’m led to believe). But frankly, I feel like I’m stuck in a chicken rut.

When it comes to weeknight cooking, I’m looking for tasty, simple and quick. Who isn’t? And it has to satisfy the man of the house of course, who happens to be a more than capable cook himself. So chicken features pretty prominently – but lately it has been chicken stir fry, chicken in some kind of store bought sauce, chicken stir fry, chicken stir fry...you get the drift. So I’m determined to spice up our repertoire a little by finding five new recipes – one for every night of the work week.

The only criteria? Every recipe has to have less than 3 ingredients I have to go specially looking for outside of our usual shop, and they have to take less than 30 minutes to prepare and cook.

I turn to my hero Donna Hay and her Fast, Fresh, Simple cookbook for my first recipe.

Quick Chick Part #1: Chicken with Haloumi & Honey

There are scarily few instructions with this recipe, even for someone like me who doesn’t tend to stick to them religiously. Preheat the oven to 180°C / 350°F. In an oven proof dish throw:
  • 2 chicken breasts
  • 4 slices of haloumi (about 150g)
  • 1 tablespoon of shredded lemon zest
  • 6 sprigs of lemon thyme
Then combine:
  • 1 tablespoon of olive oil
  • 1 tablespoon honey
And pour it over everything. You should get something that looks kind of like this:

Bake for 20 minutes and hey presto! Done. While it was cooking I threw together a fig and rocket salad dressed with a splash of olive oil and balsamic vinegar to serve it with.

While I’m dubious about how tasty something so simple can possibly be, we are pleasantly surprised. Zesty with a subtle sweetness, fresh, and with enough textural differences to keep it interesting.
